This delicious Stuffed Salmon with Goat Cheese, Spinach & Sundried Tomatoes recipe is a heart-healthy, nutrient-dense meal. Ingredients (Organic/Biodynamic)
- 2 salmon fillets (or another deep-water, line-caught fish)
- 3 oz. goat cheese, softened
- 6 oz. fresh spinach, chopped
- ¼ c. sundried tomatoes, finely chopped
- 2-3 cloves of roasted garlic*
- Celtic Sea Salt® and freshly ground black pepper, to taste
Instructions:
- Preheat oven to 420°F.
- In a large pot, add ¼ cup of water and spinach over medium heat. Cook for 3-4 minutes until spinach is cooked. Drain the spinach in a colander and let it cool. Set aside.
- Place the salmon fillets in a baking dish made of glass or ceramic. Using a sharp knife, slice down the center of each fillet, cutting all the way to the skin but not through it. If the fillets are skinless, cut about ¾ of the way through. Sprinkle with Celtic Sea salt and freshly ground black pepper.
- In a mixing bowl, combine the spinach, sundried tomatoes, softened goat cheese, and 2-3 cloves of the roasted garlic. Stir until well mixed.
- Evenly divide the filling between the fillets, and stuff the salmon. Layer any extra on top.
- Place the stuffed salmon in the oven and bake for 12-15 minutes, or until the fish is cooked through.
- Let the salmon rest for a few minutes after baking, then serve warm.

Ingredients (Organic/Biodynamic)
- Whole head of garlic
- Celtic Sea Salt®
Instructions:
- Preheat oven to 400°F.
- Trim the top off a whole head of garlic, ensuring the cloves are exposed.
- Place the garlic, cut side up, in a Dutch oven.
- Lightly season with Celtic Sea Salt.
- Cover with an oven-safe lid and roast for 45 minutes to an hour, or until the cloves turn golden and become tender.
- Remove from the oven and allow it to cool before using. If preferred, roast the garlic in advance and refrigerate for up to a week.
